Creamy Herb Chicken with Mashed Potatoes and Honey Glazed Carrots

A comforting dish featuring juicy chicken thighs in a creamy herb sauce, served with buttery mashed potatoes and sweet honey glazed carrots.

  • 4 Chicken thighs
  • 1 cup Cream
  • 2 tbsp Herbs (such as thyme and rosemary)
  • 3 cloves Garlic
  • Salt, to taste
  • Pepper, to taste
  • 4 Potatoes
  • 1/2 cup Butter
  • 1/2 cup Milk
  • 2 tbsp Honey
  • 4 Carrots

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken thighs with salt, pepper, and herbs.
  3. Sear the chicken in a hot pan until golden brown on both sides.
  4. Add garlic and cream to the pan and transfer it to the oven to bake for 25-30 minutes until cooked through.
  5. While the chicken is baking, peel and chop the potatoes, boil them until soft, then drain.
  6. Mash the potatoes with butter and milk until creamy.
  7. For the honey glazed carrots, steam or boil the carrots until tender, then glaze with honey over low heat.
  8. Serve the creamy herb chicken alongside mashed potatoes and honey glazed carrots.

Notes

For extra flavor, consider marinating the chicken in herbs and garlic a few hours before cooking. Use Yukon Gold potatoes for smoother mashed potatoes.
