Creamy Low Carb Chicken Casserole with Broccoli and Bacon

A comforting and simple low carb chicken casserole that combines cooked chicken, turkey bacon, and fresh broccoli in a creamy ranch dressing base.

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Steam or blanch broccoli until just tender, then drain well.
  3. In a large bowl, mix chicken, broccoli, turkey bacon, garlic, mozzarella, cheddar, and ranch dressing.
  4. Spread mixture evenly in baking dish.
  5. Sprinkle the top with additional cheddar and mozzarella.
  6. Bake for 25-30 minutes until hot and bubbly.
  7. Let rest for 5-10 minutes before serving.

Notes

Pat the broccoli dry after steaming to avoid a watery dish. If using raw chicken, ensure it is cooked through.
