Creamy Shrimp Scampi Pasta Bake

A creamy and garlicky pasta bake featuring shrimp and cheese, perfect for weeknight dinners or cozy gatherings.

  • 8 oz pasta (e.g., penne or rotini)
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes, and cook until the shrimp are pink and opaque, about 3-4 minutes.
  5. Stir in heavy cream and half of the Parmesan cheese, mixing until well combined.
  6. Combine the cooked pasta with the shrimp mixture, and transfer the mixture to a greased baking dish.
  7. Top with the remaining Parmesan and shredded mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with chopped parsley before serving.

Notes

Let the bake rest for a few minutes before serving to allow the sauce to firm slightly.
