Crispy Cheesy Mashed Potato Bites

Golden and soft inside, these Crispy Cheesy Mashed Potato Bites make a perfect snack or side dish.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine mashed potatoes, shredded cheese, green onions, egg, salt, and pepper. Mix until well combined.
  2. Form the mixture into small balls or patties.
  3. Roll each ball in breadcrumbs to coat.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the potato bites until golden brown on all sides, about 3-4 minutes per side.
  6. Remove and drain on paper towels. Serve warm.

Notes

Serve with ketchup, sour cream, or a garlic dip. Store in an airtight container in the fridge for up to 3 days.
