Crispy Zucchini Fritters

Simple, crisp, and quick to make, these zucchini fritters are perfect as a snack, side, or light meal.

  • 2 medium zucchini, grated
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 large egg (or flax egg for vegan option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Grate the zucchini and squeeze out excess moisture with a clean towel.
  2. In a bowl, combine grated zucchini, flour, breadcrumbs, egg, Parmesan cheese (if using), garlic, salt, pepper, and paprika. Mix until well combined.
  3. For baking, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Scoop spoonfuls of the mixture onto the sheet, flattening them slightly. Spray with cooking oil and bake for 20-25 minutes, flipping halfway through.
  4. For frying, heat oil in a pan over medium heat. Form patties from the mixture and fry for 3-4 minutes on each side until golden brown.
  5. Serve warm with your favorite dip.

Notes

Squeeze zucchini well to avoid soggy fritters. Adjust breadcrumbs or flour for consistency as needed.
