Dark Chocolate Raspberry Pie Bars

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1 cup fresh raspberries
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a saucepan, melt the dark chocolate chips and butter together over low heat, stirring until smooth.
  3. Remove from heat, and stir in sugar, eggs, and vanilla.
  4. Mix in flour, cocoa powder, and salt until just combined.
  5. Fold in the raspberries gently.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before cutting into bars. Dust with powdered sugar before serving.
