A stunning red velvet cheesecake topped with a glossy chocolate drip and Oreo crust, perfect for special occasions.

Ingredients

Scale
  • 1 1/2 cups Oreo cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 box red velvet cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup red chocolate melts or red candy melts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a bowl, combine Oreo cookie crumbs and melted butter. Press the mixture into the bottom of the prepared cake pan to form the crust.
  3. Prepare the red velvet cake mix according to package instructions and pour it over the crust in the pan.
  4. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
  5. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
  6. Once the cake is cooled, spread the cheesecake mixture on top of the red velvet cake layer.
  7. Refrigerate for at least 4 hours or overnight to set.
  8. To make the drip, melt red chocolate melts in the microwave, stirring until smooth. Drizzle over the top of the cheesecake.
  9. Slice and serve the cheesecake, preferably chilled.

Notes

Serve chilled, garnished with Oreo crumbs or fresh berries. Can add whipped cream on top for extra decadence.
