Decadent Toffee

A simple, rich toffee that’s hard, buttery, and very sweet, topped with chocolate and nuts.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water
  • 1 cup semi-sweet or milk chocolate chips
  • 0.5 cup chopped nuts

Instructions

  1. Line the baking pan with parchment paper or foil, lightly buttering it.
  2. In a saucepan, mix butter, sugar, salt, and water over low heat until melted.
  3. Increase heat to medium-high and bring to a boil, stirring often.
  4. Attach a candy thermometer and boil until it reaches 300°F (hard-crack stage).
  5. Remove from heat and stir in vanilla extract.
  6. Pour the hot toffee into the lined pan and spread evenly.
  7. Allow the chocolate chips to melt on the hot toffee for 1-2 minutes before spreading.
  8. Sprinkle chopped nuts over the soft chocolate layer.
  9. Chill in the fridge for at least 30 minutes or until set.
  10. Once firm, lift out using the paper and break into pieces.

Notes

Store in an airtight container at room temperature for up to two weeks, or keep in the fridge for longer storage.
