Thumbprint Cookies

Delicious and easy thumbprint cookies perfect for any occasion, with a buttery bite and jam filling.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Jam or curd (e.g., raspberry, strawberry, apricot, or lemon curd)
  • Optional: Finely chopped nuts or coconut for rolling

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Beat in the yolk and vanilla, scraping the bowl to mix evenly.
  3. Stir in flour and salt until a soft dough forms.
  4. Roll dough into 1-inch balls and optionally roll in chopped nuts or coconut.
  5. Press a small well in each ball using your thumb.
  6. Fill each well with about 1/2 teaspoon of jam or curd.
  7. Bake at 350°F until edges are just set and bottoms lightly golden, about 10 to 12 minutes.
  8. Cool on the sheet for a couple of minutes before transferring to a rack to set.

Notes

For best results, use room temperature butter and ensure your oven is fully preheated. Chill dough balls if they spread too much.
