Delicious Steak Burritos

Satisfying steak burritos packed with tender steak, creamy guacamole, and zesty pico de gallo, all wrapped in warm tortillas.

Ingredients

  • 1 pound of strip steak (sliced)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 clove of garlic (minced)
  • 1 tablespoon of lime juice
  • 1/2 teaspoon of cumin
  • 1 tablespoon of soy sauce
  • 1 tablespoon of olive oil
  • 1 cup of cooked cilantro lime rice (or Mexican rice)
  • 1/2 cup of guacamole
  • 1/2 cup of pico de gallo
  • 1/2 cup of shredded cheddar cheese
  • 4 flour tortillas (8-inch)
  • Fresh jalapeños or bell peppers (sliced)
  • Fresh cilantro or green onions (chopped)
  • Chipotle mayo (or lime crema)
  • Nonstick cooking spray

Instructions

  1. In a bowl, mix the salt, pepper, garlic, lime juice, cumin, and soy sauce to create the marinade.
  2. Toss the steak pieces into the marinade, coating them well. Let them marinate for at least 30 minutes or up to an hour.
  3. Pat the steak dry. Heat a skillet or griddle over medium-high heat and cook the steak for about 5 minutes until it reaches your desired level of doneness. Set aside.
  4. Warm each tortilla for about half a minute to make them pliable.
  5. Assemble the burritos by laying out the heated tortillas. Add rice, steak, guacamole, pico de gallo, and cheddar cheese on each tortilla. Add bell peppers or jalapeños and drizzle with Chipotle mayo to taste, but don’t overfill.
  6. Roll each burrito carefully, then spray them with nonstick spray.
  7. Cook each burrito seam-side down in a hot skillet or griddle until the bottom is golden brown. Flip and cook the other side for a nice crisp.

Notes

Serve warm with extra guacamole, pico de gallo, or your favorite hot sauce.
