400g spaghetti
6 cloves garlic, thinly sliced
60ml extra virgin olive oil
1 teaspoon red pepper flakes
Salt, to taste
Fresh parsley, chopped, for garnish
50g grated Parmesan cheese (optional)
Instructions
Boil a large pot of salted water and cook the spaghetti until al dente, according to package instructions. Reserve 1 cup of pasta water, then drain the pasta.
In a large skillet, heat olive oil over medium heat. Add the garlic and red pepper flakes, sautéing until the garlic is golden brown.
Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time.
Season with salt and garnish with chopped parsley and Parmesan cheese, if desired. Serve immediately.
Notes
For a richer flavor, use high-quality olive oil and fresh herbs.
