Vegetarian Lasagna

A delicious and hearty vegetarian lasagna layered with fresh vegetables and cheese.

Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, fresh
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat, sauté garlic, zucchini, and bell pepper until softened.
  4. In a bowl, mix ricotta cheese, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Add a layer of noodles, followed by ricotta mixture, sautéed vegetables, spinach, mozzarella, and more marinara sauce.
  7. Repeat layers until all ingredients are used, finishing with sauce and mozzarella on top.
  8. Sprinkle parmesan cheese over the top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

Serves 6, perfect for meal prep, can be made vegetarian-friendly.
