Easy French Onion Pasta

A comforting and quick pasta dish featuring caramelized onions, creamy cheese, and rich beef broth, perfect for cozy nights.

  • 8 oz pasta
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup Gruyère cheese, shredded
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 20-25 minutes until caramelized.
  3. Stir in the minced garlic and thyme, and cook for an additional 1-2 minutes.
  4. Pour in the beef broth and bring to a simmer; let it reduce for about 5 minutes.
  5. Lower the heat and stir in the heavy cream and cooked pasta, mixing until well combined.
  6. Add the Gruyère cheese, stirring until melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, replace beef broth with vegetable broth. Leftovers can be reheated gently with a splash of broth to maintain texture.
