Easy Street Corn Chicken Rice Bowl

A quick and flavorful meal featuring chicken, sweet corn, and lime over rice.

  • 1 cup cooked rice
  • 1 pound chicken breast, diced
  • 1 cup sweet corn (canned or frozen)
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro (optional)
  • Sliced avocado (optional)
  • Sour cream (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  3. Stir in the sweet corn and cook for an additional 2 minutes.
  4. Remove from heat and stir in lime juice.
  5. Serve the chicken mixture over rice. Top with cilantro, avocado, or sour cream if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
