Egg Roll Bowls with Chicken and Cabbage

Quick and healthy egg roll bowls combining savory chicken, crispy vegetables, and delicious soy sauce flavor.

Ingredients

  • 1 lb ground chicken
  • 2 cups shredded cabbage
  • 1 cup carrots, shredded
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Cooked rice or cauliflower rice for serving

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add garlic and ginger; sauté for 1-2 minutes until fragrant.
  3. Add ground chicken and cook until browned and fully cooked, breaking it apart as it cooks.
  4. Stir in cabbage and carrots, cooking until slightly soft, about 3-4 minutes.
  5. Pour in soy sauce and mix well.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or cauliflower rice and top with sliced green onions.

Notes

If you want a little heat, feel free to add some red pepper flakes or sriracha while cooking. You can replace chicken with tofu for a vegetarian option.
