Elegant Black Forest Cake Roll

A visually stunning cake roll featuring rich chocolate sponge, light whipped cream, and tart cherries, perfect for special occasions.

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherries, pitted and halved
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Fresh cherries (for decoration)
  • Chocolate curls (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar until light and fluffy.
  3. Sift in cocoa powder, flour, and salt, and gently fold until combined.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes.
  5. Once baked, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.
  6. Roll the cake up with the towel and let it cool completely.
  7. In a separate bowl, whip the cream, powdered sugar, and vanilla until stiff peaks form.
  8. Unroll the cooled cake, spread the whipped cream evenly, and top with halved cherries.
  9. Roll the cake back up without the towel and place seam side down.
  10. For the ganache, heat the cream until just simmering and pour over the chocolate chips; let sit for 2 minutes then stir until smooth.
  11. Pour the ganache over the rolled cake and let it set.
  12. Decorate with fresh cherries and chocolate curls. Slice and serve.

Notes

Store any leftovers in the refrigerator for 2 to 3 days or freeze individual slices for later use.
