Fluffy Cranberry Orange Ricotta Pancakes

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 cup fresh or frozen cranberries
  • Zest of 1 orange
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together ricotta, milk, and eggs until smooth.
  2. In another bowl, combine flour, baking powder, sugar, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  3. Fold in cranberries and orange zest gently.
  4. Heat a non-stick skillet over medium heat and add butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with syrup or additional cranberries.

Notes

Best served warm. Drizzle with maple syrup or top with fresh cream for added flavor. Leftovers can be stored in the refrigerator for up to three days.
