Gourmet Brownie Cookies

Deliciously rich gourmet brownie cookies that combine the best of brownies and cookies for a soft and chewy treat.

  • 1 cup butter, melted
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the melted butter and sugar until well combined.
  3. Add the eggs and vanilla extract, and whisk until smooth.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the center is still soft.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve with a scoop of vanilla ice cream or a sprinkle of powdered sugar on top. Store in an airtight container for up to one week.
