Gourmet Grilled Cheese with Sun-Dried Tomatoes and Spinach

A warm, simple grilled cheese sandwich featuring creamy ricotta, tangy sun-dried tomatoes, and fresh spinach.

Ingredients

  • 2 slices of bread
  • 2 tablespoons of butter
  • 1/4 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, washed and dried
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. In a bowl, mix the ricotta cheese with the sun-dried tomatoes, spinach, salt, and pepper.
  4. Place one slice of bread in the skillet, buttered side down.
  5. Spread the ricotta mixture on top, and add mozzarella cheese if using.
  6. Place the second slice of bread on top, buttered side up.
  7. Cook for 3-4 minutes until golden brown, then flip and cook the other side until golden and the cheese is melted.
  8. Slice and serve warm.

Notes

Dry the spinach well to avoid sogginess. For extra flavor, add lemon zest to the ricotta mix or include thinly sliced red onion for crunch.
