Greek Chicken Bowls

A quick and fresh meal with chicken, veggies, and a tangy tzatziki sauce, perfect for lunch or dinner.

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • Pita bread or rice, for serving

Instructions

  1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or cook the chicken in a skillet until fully cooked.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, chopped fresh dill, salt, and lemon juice.
  4. Chop the fresh veggies: tomatoes, red onion, and cucumber.
  5. Slice the cooked chicken.
  6. In a bowl, layer the chicken, veggies, feta cheese, and tzatziki sauce.
  7. Serve with pita bread or over rice.

For best texture, store components separately and assemble when ready to eat.
