Greek Chicken Bowls

A colorful and flavorful dish that combines grilled chicken with fresh veggies and creamy tzatziki sauce, perfect for family gatherings.

  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1 cup Greek yogurt
  • 1 cucumber (grated and drained)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Juice of 1 lemon

Instructions

  1. In a bowl, whisk together olive oil, garlic, oregano, salt, and pepper. Marinate the chicken breasts in the mixture for at least 30 minutes.
  2. Grill the chicken over medium-high heat for about 6-7 minutes on each side or until fully cooked.
  3. Let the chicken rest, then slice it into strips.
  4. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper in a bowl.
  5. To assemble the bowls, divide the cooked rice or quinoa among bowls, top with grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  6. Drizzle with tzatziki sauce and serve.

Notes

Marinate the chicken longer for more flavor. Store leftovers in airtight containers for 3-4 days.
