Greek Chicken Bowls

A vibrant and healthy bowl featuring marinated grilled chicken, fresh vegetables, and creamy tzatziki sauce, perfect for weeknight dinners or gatherings.

  • 1 lb chicken breast
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup bell peppers, diced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tsp dried oregano

Instructions

  1. Marinate the chicken with olive oil, lemon juice, salt, pepper, and dried oregano for at least 30 minutes.
  2. Grill or cook the chicken over medium heat until fully cooked, then slice it.
  3. Prepare the tzatziki sauce by mixing yogurt, garlic, dill, salt, and pepper in a bowl.
  4. Layer the cooked rice or quinoa with grilled chicken, cherry tomatoes, cucumber, red onion, bell peppers, and feta cheese in a serving bowl.
  5. Drizzle with the tzatziki sauce and serve.

Notes

Marinate the chicken longer for more flavor. Feel free to customize with your favorite toppings such as olives, avocado, or extra herbs.
