Greek Chicken Bowls

A fresh and easy meal featuring grilled chicken, crisp vegetables, salty feta, olives, and cool tzatziki in one satisfying bowl.

  • 2 Chicken breasts
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 Lemon, juiced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, chopped
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • 1/2 cup Tzatziki sauce (yogurt, cucumber, garlic, dill)

Instructions

  1. Marinate chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until cooked through.
  3. Chop fresh vegetables like cucumber, tomatoes, and red onion.
  4. Assemble the bowls with sliced chicken, vegetables, and toppings of feta cheese and olives.
  5. Serve with homemade tzatziki sauce on the side.

Notes

Pound chicken to even thickness for fast, even cooking. Use Greek yogurt for a thick tzatziki. Store leftovers in separate airtight containers to maintain freshness.
