Greek Chicken Gyros

A quick and delicious recipe for Greek Chicken Gyros, marinated with lemon, garlic, and oregano, served in warm pita with tzatziki and fresh veggies.

  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 pieces of warm pita bread
  • 1 cup tzatziki sauce (homemade or store-bought)
  • Fresh vegetables: sliced tomatoes, red onion, shredded lettuce

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Add chicken strips and coat evenly. Marinate for at least 30 minutes (or overnight for best flavor).
  2. Preheat grill or grill pan over medium-high heat. Cook marinated chicken for 5-7 minutes on each side until fully cooked (internal temp of 165°F).
  3. Prepare tzatziki sauce by combining grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper in a bowl; chill.
  4. Warm pita bread and layer with grilled chicken, tzatziki sauce, and fresh veggies. Roll tightly and serve.

Notes

Store cooked chicken in an airtight container in the fridge for 3-4 days. Assemble the gyros right before eating to keep the pita from getting soggy.
