Grilled Maple Sriracha Chicken Bites

A delightful dish combining sweet maple syrup and fiery Sriracha for a flavorful grilled chicken experience.

  • 1 lb Chicken breast
  • 1/4 cup Maple syrup
  • 2 tbsp Sriracha sauce
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 cups Coconut rice
  • 1 Mango, diced
  • 1 Avocado, diced
  • 2 tbsp Lime juice
  • 1/4 cup Cilantro, chopped

Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. In a bowl, mix maple syrup, Sriracha sauce, salt, and pepper to create a marinade.
  3. Add chicken pieces to the marinade and let sit for at least 30 minutes.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Grill the chicken bites for about 10-12 minutes, or until cooked through, turning occasionally.
  6. While chicken is grilling, prepare coconut rice according to package instructions.
  7. In a bowl, combine diced mango, avocado, lime juice, and chopped cilantro to make the salsa.
  8. Serve the grilled chicken bites over coconut rice and top with the mango avocado salsa.

Notes

For extra flavor, let the chicken marinate longer. Serve immediately for best results.
