Grilled Steak Bowl with Sauce & Grilled Zucchini

A simple and filling bowl meal with grilled steak, zucchini, rice, and a creamy sauce, perfect for any weeknight dinner.

  • 1 lb steak (flank or skirt), about 450 g
  • 2 medium zucchini, sliced lengthwise
  • 2 cups cooked rice (white or brown)
  • 4 cups salad greens or mixed greens
  • 1 small red onion, thin sliced (optional)
  • 1 cup cherry tomatoes, halved (optional)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup plain yogurt or sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice or vinegar
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper to taste

Instructions

  1. Prep steak and zucchini. Pat steak dry, rub with 1 tbsp olive oil, salt, and pepper. Slice zucchini and brush with remaining oil, salt, and pepper.
  2. Make sauce. In a small bowl, mix yogurt, mayonnaise, lemon juice, garlic, and mustard. Season with salt and pepper. Set aside.
  3. Heat grill or grill pan over medium-high heat.
  4. Grill zucchini 2–3 minutes per side until tender and lightly charred. Remove and keep warm.
  5. Grill steak 3–5 minutes per side for medium-rare, or longer to your doneness. Use tongs to turn once.
  6. Rest steak 5 minutes on a plate, then slice thinly across the grain.
  7. Warm rice if needed.
  8. Assemble bowls: start with rice, add greens, place steak slices and grilled zucchini, top with sauce, onions, and tomatoes.

Notes

Slice steak against the grain for tenderness. Don’t overcook zucchini; it should maintain some bite.
