Ground Beef and Broccoli

A quick and delicious weeknight meal made with ground beef and fresh broccoli, perfect for busy nights.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups broccoli florets (fresh or frozen)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon brown sugar
  • 1/2 cup beef broth or water
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • 1 tablespoon sesame oil (optional)
  • 1 teaspoon grated ginger (optional)
  • Cooked rice or quinoa (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  2. Add the onion and garlic to the skillet. Cook for about 3-4 minutes until the onion softens.
  3. Stir in the broccoli, soy sauce, oyster sauce (if using), brown sugar, and beef broth. For a thicker sauce, mix cornstarch with a little water and add it in. Let everything simmer for 5-7 minutes or until the broccoli is tender.
  4. Stir in sesame oil and ginger (if using). Taste and adjust seasoning as needed.
  5. Serve over cooked rice or quinoa and enjoy!

Notes

For a little heat, add red pepper flakes when cooking the beef. You can use frozen vegetable mixes for convenience.
