Ground Beef Enchiladas

These Ground Beef Enchiladas are warm, comforting, and packed with flavor, making them perfect for a family dinner or a crowd.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 can (4 oz) diced green chilies (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1012 corn tortillas
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/2 cup sour cream (for serving, optional)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Cook the ground beef in a large skillet over medium heat, breaking it apart until browned, about 5-7 minutes. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet, cooking for another 3-4 minutes until the onion is soft.
  3. Stir in the cumin, chili powder, paprika, and salt and pepper. Cook for 2-3 minutes to blend the spices, then add 1/2 cup of enchilada sauce and remove from heat.
  4. Heat tortillas in a dry skillet or microwave to keep them pliable.
  5. Preheat your oven to 375°F (190°C) and spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  8. Cover with foil and bake for 20-25 minutes or until cheese is melted and bubbly. Remove foil and bake for an additional 5 minutes for a crispy top.
  9. Allow to rest before serving, garnished with sour cream and cilantro if desired.

Notes

Use warmed tortillas to avoid cracking. Extra spices and toppings can enhance flavor.
