Ground Turkey Taco Skillet

A quick and delicious one-pan meal featuring ground turkey, bell peppers, and black beans, perfect for busy weeknights.

  • 1 pound ground turkey
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning
  • Salt and pepper to taste
  • Taco shells or tortillas (optional, for serving)
  • Shredded cheese, avocado, and salsa (optional, for toppings)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced onion and bell pepper, sauté until softened, about 5 minutes.
  3. Add ground turkey, breaking it up with a spoon, and cook until browned, about 6-8 minutes.
  4. Stir in corn, black beans, taco seasoning, salt, and pepper.
  5. Cook for an additional 2-3 minutes until heated through.
  6. Serve in taco shells, bowls, or right from the skillet, topping with cheese, avocado, and salsa if desired.

Notes

For added flavor, consider adding your favorite hot sauce or fresh cilantro. Substitute ground turkey with chicken or beef, and use different veggies or beans as desired.
