Guilt-Free Zucchini Pizza Casserole

A healthy twist on pizza flavors using zucchini as a base, perfect for family gatherings and customizations.

  • 2 medium zucchinis, sliced
  • 1 lb ground beef or turkey
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: pepperoni, bell peppers, olives

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground meat in a skillet over medium heat until fully cooked. Drain excess fat.
  3. Stir in marinara sauce and Italian seasoning.
  4. Layer half of the zucchini slices in a greased 9×13 inch baking dish.
  5. Spread half of the meat mixture over the zucchini, followed by half of the mozzarella and Parmesan cheeses.
  6. Repeat the layering process with the remaining zucchini, meat mixture, and cheeses.
  7. Season with salt and pepper.
  8. Bake for 25-30 minutes or until the cheese is bubbly and golden.

Slice the zucchinis evenly for better layering and feel free to add more veggies like spinach or mushrooms.
