Hawaiian Banana Bread

A moist and flavorful loaf made with ripe bananas, crushed pineapple, and coconut, perfect for breakfast or snack.

  • 3 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut flakes
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, crushed pineapple, and melted butter.
  3. Stir in sugar, eggs, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture and stir until just combined.
  6. Fold in coconut flakes.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool for 10 minutes before transferring to a wire rack.

Notes

For best results, use very ripe bananas and ensure the crushed pineapple is well-drained.
