Hawaiian Chicken Sheet Pan

A simple weeknight dinner featuring sweet pineapple and savory chicken thighs, baked with bell peppers and onions for a quick, one-pan meal.

  • 2 lbs chicken thighs
  • 1 cup pineapple glaze
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 cups white rice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix pineapple glaze, soy sauce, minced garlic, salt, and pepper.
  3. Marinate the chicken thighs in the glaze for at least 30 minutes.
  4. On a large sheet pan, arrange the marinated chicken, sliced bell peppers, and onions.
  5. Drizzle with olive oil and season with additional salt and pepper.
  6. Bake in the oven for about 25-30 minutes, or until the chicken is cooked through.
  7. Serve over fluffy white rice.

Notes

Pat the chicken dry before marinating for better glaze adherence. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
