Healthy Chicken & Sweet Potato Rice Bowl

A quick and healthy meal featuring roasted sweet potatoes, lean chicken, and rice, perfect for busy weeknights.

  • 1 lb chicken breast
  • 2 medium sweet potatoes
  • 1 cup rice (brown or white)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Optional: fresh herbs for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes, toss them with olive oil, salt, and pepper, and spread on a baking sheet. Roast for 20-25 minutes until tender.
  3. While the sweet potatoes roast, cook the rice according to package instructions.
  4. Season chicken breasts with olive oil, salt, pepper, garlic powder, and paprika. Grill or pan-sear over medium heat until cooked through, about 6-7 minutes per side.
  5. Once everything is cooked, assemble the rice bowls: start with a base of rice, add roasted sweet potatoes, and top with sliced chicken.
  6. Garnish with fresh herbs if desired and serve warm.

Notes

Store leftovers in airtight containers; eat within four days or freeze for up to three months. Reheat gently for best texture.
