Healthy Chicken and Sweet Potato

A nutritious one-pan meal featuring tender chicken and roasted sweet potatoes, perfect for a comforting dinner.

  • 1 lb lean chicken
  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp rosemary

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. In a bowl, toss the sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  4. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes, or until tender.
  5. While the sweet potatoes are roasting, season the chicken with salt, pepper, and rosemary.
  6. Heat a skillet over medium heat and cook the chicken until browned and cooked through, about 6-7 minutes per side.
  7. Serve the chicken alongside the roasted sweet potatoes.

Notes

Cut the sweet potatoes into even cubes for uniform cooking. Consider searing the chicken for crispy skin.
