Healthy Lemon Garlic Chicken Meal Prep Bowls

  • 2 chicken breasts
  • 4 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 cup quinoa, cooked
  • Cherry tomatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix lemon juice, minced garlic, olive oil, salt, and pepper in a bowl.
  3. Add chicken breasts to the marinade and let sit for at least 15 minutes.
  4. Place chicken on a baking sheet and roast for 20-25 minutes or until cooked through.
  5. Steam or roast broccoli until tender.
  6. Cook quinoa according to package instructions.
  7. Once chicken is done, let it rest, then slice it.
  8. Layer quinoa, broccoli, sliced chicken, and cherry tomatoes in meal prep bowls.
  9. Garnish with fresh parsley.
  10. Store in the fridge and enjoy throughout the week.

Notes

Marinate the chicken longer for a stronger flavor. Feel free to add other veggies like bell peppers or zucchini.
