Healthy Street Corn Salad with Greek Yogurt

A refreshing and nutritious street corn salad featuring grilled corn, Greek yogurt, and fresh veggies, perfect for summer gatherings.

Ingredients

  • 4 ears of corn, husked
  • 1 cup Greek yogurt
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Grill the corn until charred, then let it cool.
  2. Cut the kernels off the cobs and place them in a large bowl.
  3. Add the Greek yogurt, diced bell pepper, diced onion, lime juice, and cilantro to the bowl.
  4. Mix well and season with salt and pepper to taste.
  5. Serve immediately or refrigerate for a refreshing side dish.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. For added flavor, get nice char marks when grilling the corn.
