Delicious and crispy sweet potato hash browns, perfect for a healthy breakfast or brunch.

  • 1 small onion
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and grate the sweet potatoes. Squeeze out excess moisture using a clean kitchen towel.
  2. Finely chop the onion.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the onion and sauté until translucent.
  5. Add the grated sweet potatoes, season with salt, pepper, and any optional spices.
  6. Cook for about 5-7 minutes until they start to brown, then flip and cook the other side until crispy.
  7. Serve hot, optionally with eggs or toppings of your choice.
