Healthy Zucchini Fritters

These light and crispy zucchini fritters are quick to make and serve as a delightful side or snack.

Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour for low-carb option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley or dill
  • 1 tbsp olive oil or olive oil spray for pan-frying

Instructions

  1. Grate zucchini, then squeeze out excess moisture.
  2. Combine grated zucchini with egg, flour, herbs/spices, and mix-ins until batter forms.
  3. Heat a non-stick skillet over medium heat with a little oil.
  4. Scoop about ¼ cup of batter into the skillet and flatten into fritters.
  5. Cook for 3-4 minutes per side or until golden and cooked through.
  6. Drain on paper towels and serve warm.

Notes

For extra crispness, consider adding a spoon of grated Parmesan. Serve with a dollop of Greek yogurt or a light yogurt-dill sauce.
