High-Protein Breakfast Bake

A nutritious and delicious breakfast bake packed with protein from cottage cheese and eggs, combined with oats and blueberries.

  • 2 cups cottage cheese
  • 1 cup blueberries
  • 2 cups oats
  • 1/4 cup honey or maple syrup
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cottage cheese, eggs, honey (or maple syrup), and vanilla extract until smooth.
  3. In another bowl, mix oats, baking powder, cinnamon, and salt.
  4. <strong gradually fold the dry ingredients into the wet mixture until well combined.
  5. Gently fold in the blueberries.
  6. Pour the mixture into a greased baking dish and spread it evenly.
  7. Bake for 25-30 minutes or until set and lightly golden.
  8. Allow to cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the fridge for up to five days. Reheat in the microwave or oven. For longer storage, freeze individual slices.
