High Protein Chicken Fried Rice

A quick and easy high-protein chicken fried rice, packed with mixed vegetables and flavor, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or wok over medium heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender.
  3. Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked.
  4. Add the shredded chicken and cooked rice to the skillet. Pour the soy sauce over the top and mix everything together.
  5. Stir-fry for an additional 5 minutes, ensuring everything is well combined and heated through.
  6. Season with salt and pepper to taste and sprinkle with sliced green onions before serving.

Notes

Use day-old rice for the best texture. Feel free to add your favorite sauces for extra flavor. For a spicy kick, add some chili flakes or sriracha.
