High Protein Chicken Fried Rice

This High Protein Chicken Fried Rice is a simple weeknight meal that fills you up and takes little time to make. It combines cooked rice, chicken, and eggs for a balanced dish.

  • 2 cups cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the mixed vegetables and cook until tender, about 3-5 minutes.
  3. Push the vegetables to one side of the skillet, pour the beaten eggs in the empty side, and scramble them.
  4. Once cooked, combine with the vegetables.
  5. Add the cooked rice and shredded chicken to the skillet.
  6. Pour in the soy sauce and sesame oil, mixing everything together.
  7. Cook for an additional 3-5 minutes until heated through.
  8. Garnish with chopped green onions and season with salt and pepper to taste. Serve immediately.

Notes

Use day-old rice for best results. Add extra veggies or swap protein as desired.
