High-Protein Chicken Ranch Quesadilla

A quick and filling quesadilla packed with protein from shredded chicken, Greek yogurt, and cheese, perfect for busy weeknights.

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for the pan

Instructions

  1. Heat a non-stick skillet over medium heat and lightly spray with cooking spray or oil.
  2. In a bowl, mix the shredded chicken with Greek yogurt and ranch seasoning.
  3. Spread the chicken mixture on one half of the low-carb tortilla.
  4. Place the Laughing Cow cheese wedges on top of the chicken.
  5. Fold the tortilla in half to cover the filling.
  6. Cook on the skillet for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
  7. Remove from heat, slice, and serve warm.

Notes

Serve warm with a green salad or salsa for dipping. Leftovers can be stored in the fridge for up to three days.
