High Protein Chicken Ranch Quesadilla

A quick and easy high-protein quesadilla made with shredded chicken, Greek yogurt, and ranch seasoning, perfect for busy nights.

  • 1 low-carb tortilla
  • 1/2 cup shredded chicken (cooked)
  • 2 tablespoons Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 tablespoon ranch seasoning
  • Oil or cooking spray (for the skillet)

Instructions

  1. Mix shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until well combined.
  2. Heat a skillet over medium heat and spray with cooking oil.
  3. Place the low-carb tortilla in the skillet.
  4. Spread the chicken mixture evenly over half of the tortilla.
  5. Fold the tortilla over and cook until the bottom is golden brown, about 3-4 minutes.
  6. Flip the quesadilla and cook the other side until golden and the cheese is melted.
  7. Remove from heat, slice, and serve.

Notes

Great served with fresh salsa, a green salad, or steamed vegetables. Can be stored in an airtight container in the fridge for up to three days.
