Hobo Casserole

A comforting and easy one-dish meal combining ground beef, potatoes, and cheese, perfect for any occasion.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, for about 5-7 minutes until browned and cooked through. Drain excess fat if needed.
  3. Add the chopped onion and minced garlic to the skillet with the beef and cook for another 3-4 minutes until the onion is soft.
  4. Spread the cooked beef mixture evenly in the bottom of the baking dish and layer the thinly sliced potatoes on top. Season with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle the shredded cheddar and grated Parmesan over the top and pour beef broth (or water) around the edges for moisture. Optionally, drizzle with milk for extra creaminess.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for another 15-20 minutes until the potatoes are tender and the cheese is golden.
  7. Garnish with fresh parsley if desired and serve hot!

Notes

For extra flavor, consider adding chopped bell peppers or mushrooms. For a crispy top, broil for a minute or two at the end.
