Hobo Casserole Ground Beef

A warm and filling casserole made with ground beef, layered potatoes, and a cheesy topping that’s perfect for busy weeknights.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  3. Add chopped onion and minced garlic to the skillet and cook until soft, about 3-4 minutes.
  4. Layer thinly sliced potatoes over the cooked beef in the baking dish. Season with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle shredded cheddar and grated Parmesan on top. Pour beef broth (or water) around the edges and drizzle with milk if desired.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, until potatoes are tender and cheese is bubbly.
  7. Garnish with fresh parsley and serve hot!

Notes

This casserole can be customized with different cheeses or vegetables as per your preference. Great for leftovers!
