Homemade Chicken Soup

A comforting chicken soup that brings warmth with every spoonful, perfect for cold days and nourishing when feeling under the weather.

  • 2 poached chicken breasts, shredded
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 cup potatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic; sauté until softened.
  2. Add the carrots, celery, and potatoes to the pot; cook for about 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat and add the shredded chicken, green beans, salt, pepper, and thyme.
  5. Simmer for about 20 minutes or until the vegetables are tender.
  6. Stir in fresh parsley before serving. Enjoy your healthy chicken soup!

Notes

For richer flavor, roast the vegetables before adding them to the soup. Use leftover rotisserie chicken for a quicker option.
