Honey Garlic Butter Roasted Carrots

Easy and delicious honey garlic butter roasted carrots with a sweet glaze and light char.

Ingredients

  • 1 pound (450g) carrots, peeled and cut into chunks
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the melted butter, honey, minced garlic, salt, and black pepper.
  3. Add the carrots to the bowl and toss until well coated.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 20-25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
  6. Garnish with chopped fresh parsley before serving.
