Honey Lime Chicken with Avocado

A quick and refreshing dish that balances sweet honey with bright lime and savory chicken, topped with creamy avocado.

  • 4 pieces Boneless, Skinless Chicken Breasts (Thighs can also be used)
  • 3 tablespoons Honey (Can substitute with maple syrup)
  • 2 tablespoons Lime Juice (Fresh lime preferred)
  • 1 tablespoon Lime Zest
  • 2 tablespoons Olive Oil (Avocado oil is a substitute)
  • 2 cloves Garlic (Minced, fresh preferred)
  • 1 teaspoon Cumin (Can substitute with coriander)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used)
  • to taste Salt
  • to taste Pepper
  • 2 cups Cooked Jasmine or Basmati Rice (Cauliflower rice can be used for low-carb)
  • 1 medium Ripe Avocado (Ensure it’s ripe)
  • 1 tablespoon Extra Lime Juice
  • 1 tablespoon Olive Oil
  • to taste Fresh Cilantro or Parsley (For garnish)
  • to taste Chili Flakes (For heat)
  • 1 tablespoon Toasted Sesame Seeds (For garnish)

Instructions

  1. Make the glaze: whisk honey, lime juice, zest, oil, garlic, cumin, paprika, salt, and pepper.
  2. Prep chicken: pound to even thickness or slice to ensure even cooking.
  3. Marinate: coat chicken in glaze and rest for 10 to 60 minutes in the fridge.
  4. Sear: heat pan, add oil, and brown chicken for 3–5 minutes per side.
  5. Finish: move to oven at 375°F for 8–10 minutes if needed until 165°F internal temp.
  6. Prep avocado: slice and toss with lime, oil, salt, and cilantro.
  7. Serve: place chicken over rice and top with avocado and sesame seeds.

Notes

Use ripe avocado for best texture. Store leftovers properly to maintain flavor.
