Honey Lime Chicken & Avocado Rice Stack

A fresh and light dish featuring grilled honey lime chicken layered with avocado and flavorful rice.

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • Salt (to taste)
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a bowl, mix honey, lime juice, lime zest, garlic, salt, and pepper.
  2. Add chicken to the marinade and let it sit for at least 30 minutes.
  3. Heat oil in a grill or frying pan over medium heat. Cook the chicken for about 6-7 minutes on each side until thoroughly cooked.
  4. In a bowl, combine cooked rice, coriander, lime juice, and salt. Mix well.
  5. Slice avocados and sprinkle with lime juice, salt, and pepper.
  6. On a plate, layer the rice mixture, followed by the chicken and topped with sliced avocado. Serve immediately.

Notes

Marinating the chicken will deepen the flavors. Store leftovers in an airtight container in the fridge for up to 2 days.
