Honey Lime Chicken with Mango Salsa

A delightful combination of juicy chicken marinated in a sweet and tangy honey lime dressing, served with vibrant mango salsa.

  • 4 chicken breasts
  • 1/4 cup honey
  • 2 limes (juiced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 ripe mango (diced)
  • 1/2 red onion (finely chopped)
  • 1 jalapeño (seeded and diced)
  • 1/4 cup cilantro (chopped)
  • 1 tablespoon lime juice

Instructions

  1. Mix honey, lime juice, olive oil, salt, and pepper in a bowl. Marinate chicken for at least 30 minutes.
  2. Preheat the grill or oven. Cook the chicken until its internal temperature reaches 165°F (75°C).
  3. Combine diced mango, red onion, jalapeño, cilantro, and lime juice in another bowl to prepare the mango salsa.
  4. Serve the grilled chicken topped with mango salsa, alongside rice, salad, or tortillas.

Notes

For an extra kick, add more jalapeño to the salsa. You can marinate the chicken overnight for deeper flavor.
